Salivary Amylase: Effect of pH, Temperature, Activators and Inhibitors

Abstract: The salivary amylase’s enzymatic activity was observed. It was done depending on the pH and temperature at which the enzyme has its optimum activity. The best inhibitors and activators were ranked accordingly. The experiment showed that the optimum activity of salivary amylase was at 500 Celsius (at 6.7 pH) and at pH 5-6 (at 370 Celsius). The most efficient activator was Mg(NO3)2, followed by Ca(NO3)2, and Zn(NO3)2 and the best inhibitor was MgSO4 followed by Mg(NO3)2.
